Scrambled Tofu and Asparagus on Toast

This is definitely my favorite way to eat tofu!

You'll need;
Firm tofu
a tin of asparagus cuts and spears
curry powder or tumeric

Crumble the tofu into a skillet, do this by pulling off small chunks and crumbling between your fingers.
Add half a teaspoon of curry powder and stir through until all the tofu is yellow
Drain the tin of asparagus and pour into the frypan.
Spoon onto toast and serve with veggie rashers and vegan hollandaise sauce (I use the recipe from Vegan Brunch)
