Vegan Mexicano!

What a better way to start this blog than with my favorite food! I could happily eat this every day of the week and I never ever get sick of it.

This is a really good starter meal for new vegans and vegetarians because it's a familiar food (just better) with a good amount of protein thats reasonably quick, cheap and easy. It's high in protein, fibre and the other nutritional benefit is the combination of legumes and grains which means a larger variety of amino acids.

 Vegan Quesadilla and Tacos
Tortillas
Soy cheese (I like kingland omega 3 or probiotic)
Onion
Refried beans
Taco seasoning
Salsa
Lettuce
Tomato
Avocado

To make Quesadillas:
spread the salsa over the tortilla, then spread grated soy cheese over one half of tortilla
heat oil in a fry pan and fry on both sides until browned and the cheese is melty

To make tacos:
Heat oil in a saucepan then add refried beans, finely chopped onion and seasoning, stir well
Microwave or bake tortilla according to the packet (i just microwave mine for 20 seconds)
Place desired amount of refried beans in the centre of tortilla
Place lettuce, chopped tomato, avocado, soy cheese and salsa over the top and serve!
